The highlight of the festival is undoubtedly the demonstration of how pastelli is made — a long, intricate and labour-intensive process. Be sure to taste “shierepetti” (sweet carob juice) and “tertzellouthkia” (spiral-shaped sweet pastries served with carob syrup). Before you leave, don’t forget to pick up some carob syrup to take home.
