Traditional ofton kleftiko cooked in a convection oven

Ofton Kleftiko cooked in a fan oven – tender, melt-in-your-mouth lamb marinated in olive oil. Served with potatoes that soak up all the rich juices of the roast. A traditional Cypriot dish full of authentic flavour and aroma.

Traditional Ofton Kleftiko cooked in a convection oven

Ingredients
  • Lamb meat cut into portions
  • Potatoes
  • Olive oil
  • Salt
  • Bay leaves
Directions
  1. Wash and drain the lamb.
  2. Peel the potatoes, cut them into halves or quarters depending on their size, and rinse them well.
  3. In a large bowl, place the meat and potatoes. Season with salt and drizzle with olive oil.
  4. Mix everything well to coat evenly.
  5. Wrap each portion in parchment paper, then in aluminum foil, adding 2 bay leaves to each.
  6. Place the wrapped portions in a baking tray and roast in a fan-assisted oven at 180°C (356°F) for 3 to 4 hours.
  7. Slow roasting makes the meat incredibly tender—so soft it melts in your mouth!
