Traditional ofton kleftiko cooked in a convection oven

Ofton Kleftiko cooked in a fan oven – tender, melt-in-your-mouth lamb marinated in olive oil. Served with potatoes that soak up all the rich juices of the roast. A traditional Cypriot dish full of authentic flavour and aroma.

Ingredients
- Lamb meat cut into portions
- Potatoes
- Olive oil
- Salt
- Bay leaves
Directions
- Wash and drain the lamb.
- Peel the potatoes, cut them into halves or quarters depending on their size, and rinse them well.
- In a large bowl, place the meat and potatoes. Season with salt and drizzle with olive oil.
- Mix everything well to coat evenly.
- Wrap each portion in parchment paper, then in aluminum foil, adding 2 bay leaves to each.
- Place the wrapped portions in a baking tray and roast in a fan-assisted oven at 180°C (356°F) for 3 to 4 hours.
- Slow roasting makes the meat incredibly tender—so soft it melts in your mouth!
