Kapamas is a dish made of lamb or veal with tomato and spices (Bambiniotis 2005, entry καπαμάς,ο, 835).
A dish with wine which is simmering in a covered saucepan (Petrou-Poeitou 2013, entry Καππαμάς, 51).
ETYM. < turkish kapama (Babiniotis 2005, entry καπαμάς (ο), 835; Yangoullis 2009, entry καππαμάς,ο, 181) < verb kapamak 'to close, cover' (Babiniotis 2005, entry καπαμάς,ο, 835? Petrou-Poeitou 2013, entry Καππαμάς, 51).
