Nutritional Value and Importance in the Diet of Cypriots

This squash is used to make kolokotes or kolokopittes. It is also cooked with fresh louvi (black eyed beans) (Note: Stalo Lazarou).

Fresh ones were cooked with fresh louvi (black eyed beans), while the ripe ones were used to make kolokotes and kolokopittes (Kyprianou, 1997)
