The Orthodox dimension of the Cypriot diet

Our folk cuisine is based mainly on this alternation of fasting and feast. During the fasting periods, even the most simple vegetable is used to create delicious and nutritious dishes. It is a kitchen of poverty and warmth. Fasting is the cathartic bath of taste, which - through deprivation - is sharpened to come back stronger during feasts.
