A dish with chicken, onions and spices, grilled on the charcoal (Petasi, 1992 p.253).

Processing method

It was a delicious dish prepared in the village of Kythrea. They would cut the chicken in pieces, sauté them in hot olive oil together with onions and then transfer them to a pot. They would add chopped tomato, vinegar, nutmeg, cinnamon and some water. They would cover the pot with dough and cook the chicken on the charcoal or in a wood-fired oven or with pine cones (Petasi, 1992 p. 253).
