Name - Origin
Synnevrin is the meat around the kidneys, which in Cyprus is divided into 6 parts: a) prostíthin b) sirintzáhin c) sirintzáhostoum, d) synnevrin e) araklíkkin and f) merín. The words in a, d, f words are Greek and the rest are Turkish (Pharmakidou, 2003 p.349).
Synnevrin is a compound word derived from syn-nephros (pluskidney) (Pharmakidou, 2003 p.349).
Functional and symbolic role
Prostíthin was regarded the most suitable meat for roasts, the sirintzáhin was the most prime cut of all, synnevrin was preferred for its fat and merit for its meat (Pharmakidou, 2003 p. 349).
