It is assumed that the name of the dish "tsivkia" comes from "xithkia" and from "xidi" (vinegar) (Pharmakidou, 2003, p.232).

Processing method

This dish was cooked in a pot. Only hare meat was used in tsivkia. The meat was cut into pieces and several chopped onions were added along with vinegar and oil (vinegar was an essential ingredient) (Pharmakidou, 2003, p.232).
