Hiromeri is a smoked pork ham, a flavoursome traditional delicacy of Cyprus.

Boil the turkey in a pot of water. Pour lots of lemon juice over it. While it is boiling, make the stuffing. In a pan, fry the chicken livers with the rice and pepper. Chop the chestnuts and add them. Then grind the hiromeri and add it. When the turkey is cooked, transfer to a roasting tray. Stuff the turkey and secure with skewers. Put it in the oven to roast. Roasting time depends on how soft you want it to be. Serve it hot.
