Ingredients
20-25 large snails
2-3 tbsp vinegar
Flour
Dried rosemary
Salt
Olive oil for frying
Method
Wash the snails very well and put them in a pot with cold water and a bit of rosemary to boil. Add the vinegar and a bit of salt and skim off the foam. Remove them from the heat when half cooked and wash them very well to remove the foam. Remove their shells and thread them over wooden skewers, flour them, add a bit of rosemary and fry them in hot olive oil. (MANRE 2006, 7)
