Preferably use small, ripe but firm mandarins - clementines to make spoon sweets.

Ingredients

1 kilo of mandarins (clementines)
3/4 kg of sugar
1 glass of water
1 tsp lemon juice

Method

Choose small and ripe clementines (orange color). Pierce each one of them well with a toothpick. Boil them for about 5 minutes. Pierce them with a needle and when they fall off they are ready. Drain them and cover them with cold water. Change the water every day with boiling water for three days. If the peel is bitter we continue changing the water for another 1-2 days. Drain them and sprinkle with the sugar, leaving them for 3-4 hours until the juice is released. Add a glass of water and boil for 5 minutes. On the following day, boil them again over high heat until the syrup is ready. Towards the end, add the lemon juice and bring to a boil for another 1-2 minutes. Skim off the foam and trasnfer while hot in sterilised jars. Cap them tightly and turn them upside down for 3 minutes. Store in a dark and cool place free of moisture. (MANRE 2012, 73)

Comments

How do we know when the syrup is ready: Place some syrup in a spoon and let it drip away in the pot. When the syrup flows away easily, it means it is still watery and not ready. Keep on boiling and test again until the flow separates into drops. When a final drop remains hanging from the spoon, it means that the density is right and the syrup is ready. If not, that means that the syrup is not ready and needs a bit more boiling. Repeat the testing procedure again until you get the right consistency.

If the syrup is properly thickened, then the spoon sweet can be preserved for a very long period of time in a cool, dry place without having to be kept in a refrigerator. (MANRE 2009)
