A refreshing summer drink that can be easily prepared at home and stored for a long time. For the preparation of mandarin squash, the juice of Arakapa mandarins is boiled together with sugar in equal proportions.

Ingredients

Mandarin juice from Arakapa mandarins 
Sugar (1 part juice to 1 part sugar)

Method

Wash the mandarins very well and drain. Squeeze the mandarins, strain the juice, measure it and place it in a saucepan with the corresponding amount of sugar (1 glass of juice to 1 glass of sugar). Put them on low heat and stir until the mixture is hot (not boiling). Allow the mandarin juice to become lukewarm and fill up the sterile bottles. Close them and when completely cool, place them in a dark, cool place. (MANRE 2010, 72)

Comments

Orange squash (portokalàda): follow the same recipe and substitute mandarins with "Valencia" oranges (MANRE 2009).
