According to Ioannis Erotokritos, a piece of dough is rolled out with a rolling pin and turned into a flat sheet, which is brushed with butter or oil and then sprinkled with sugar. It is then baked in a clay dish or on the fireplace, just like pittes are baked (Kypri 1989, entry καττιμέριν, 466).
