"Put the cherry compote with the syrup in small bottles and close them tightly. Place the bottles back into the pot containing water and boil for 15 minutes." (“Kyperounda").

Ingredients

3 kg of cherries
½ glass of sugar 
5 glasses of water
1 tbsp of lemon juice

Method

Make the syrup. Wash the bottles well and place them in a large pot with boiling water for 5 minutes to sterilise them. Keep the pot with the water for later use. Wash the cherries and remove the stems and pits. In a basin add 1 teaspoon of lemon and 1 glass of water. Place each cherry in after removing the pit to prevent them from changing colour. Remove them, rinse them well and transfer them in a colander to drain. Put the cherries and the syrup in small jars and close them tightly. Put the jars back in the pot containing water and let them boil for 15 minutes. (‘Kyperounda'. See Kourri and Lazarou 2007)
