The word yoghurt comes from the Turkish word yoğurt.
1 litre of milk
3 tbsp sheep's milk yoghurt
In a pot, boil the milk for 2-3 minutes. Allow to cool enough (when your finger won't burn) Dissolve the yoghurt in a little milk. Add the yoghurt mixture to the pot and mix well. Pour it in a clay pot, cover with a warm cloth and leave to set. (Theognosia Andreou, Kornos)
