Fried goat with onion

Fried liver

Very quick liver dish, flavoured with cinnamon, pepper and a bit of vinegar or lemon juice.

Fried Sykotaria

Sykotaria includes the heart, lungs and black liver of the animal, which are fried one after the other.

Fried tremithies with eggs

Tremithies are the shoots of the terebinth tree. These are boiled and eaten with eggs as a tasty and original Cypriot omelette.

Fruit juice

The juice of orange, tangerine, grape or other fruit is used, along with a bit of sugar. The sugar that is added serves to preserve the aroma, colour and flavour of the juice.
