Make pasta at home! This recipe comes from Agros village.

Name - Recipe
Cypriot name of dish
Μακαρόνια του σιερκού. Makarónia tú sherkoú.
Greek name - description

Μακαρόνια του χεριού (χειροποίητα).

Language remarks

The name "macaroni" probably comes from the Greek "makaria". It is known that the ancient Greeks made dried preparations of flour that they left with oil and wine in the graves of the dead (the makarios). In another version, it may have come from the Latin "maccare" (= to eat). (http://www.melissa.gr)

Ingredients

2 kg of flour
1.5 litre of water
1 tablespoon of salt

Method

In a bowl, add the ingredients and knead well. When the dough is ready, cut a small piece of dough and rub it with your hands, so that small pieces (long and thin) are formed. Place the pasta on a woven tray (tsésto) and place in the sun to dry. Whenever there is sun, take them out again. (Christiana Stavrou, 39 years old from Agia Phyla)
