Lemonade is usually enjoyed cold, as a refreshing summer drink. It is prepared by simply adding cold water to concentrated lemon juice.

Ingredients

Version A and B
6 glasses of lemon juice
6 glasses of sugar
1 glass of water

Method

Version A 
Extract the juice from the lemons, measure it and strain it. In a pot, place the sugar and water to boil until they form a thick syrup. Remove the pot from the heat. Pour the lemon juice into the hot syrup, a little at a time, stirring quickly where the juice drops so that the syrup does not caramelise. Fill up some sterile bottles, cap them and for the first 3-4 days, shake them once a day. Then place them in a dark and cool place.

Version B 
Prepare the lemon juice and place it in a glass or plastic container with the sugar. Stir very well and leave aside for several hours, stirring occasionally until the sugar is completely dissolved. Fill the bottles, cap them and place them in the refrigerator to preserve them better. (MANRE 2009)

Comments

If the lemonade is prepared in December-January, when the lemons are still sour, measure 1½ glasses of sugar for 1 glass of lemon juice. Bergamot squash is prepared in the same manner. (MANRE 2009)
