Kitromiláda - Bitter orange Squash

Similar to lemonada and portokalada, kitromilada (bitter orange squash) is a refreshing beverage when diluted with cold water.

Bitter orange concentrate.

Ingredients

4 glasses of bitter orange juice 
6 glasses of sugar

Method

Wash the bitter oranges very well and allow them to drain. Squeeze the bitter oranges, strain the juice, measure it and place it in a saucepan with the corresponding amount of sugar (1 glass of juice to 1 1/2 glass of sugar). Place the pan on low heat and stir until the mixture is hot (not boiling). Allow the bitter orange juice to cool and fill up the sterile bottles. Close them and when completely cool, place them in a dark, cool place. (MANRE 2009)

Comments

Mandarin squash (mantarinàda): follow the same recipe and substitute bitter oranges with "Arakapa" mandarins. Note that the corresponding amount of sugar in this case is 1 glass of juice to 1 glass of sugar (MANRE 2009).
