Crack the olives. Place them in a container with water. Add the water, salt and lemon juice and mix. Put the olives in bottles and fill them with the marinade. Put a lemon leaf and some olive oil in the mouth of the bottle. Remove the olives, put them in a container, rinse them and add the dried coriander, garlic, olive oil and a little salt if needed (Georgia Neocleous, Kyperounda).
