Παραδοσιακά η ζαλατίνα στην Κύπρο φτιαχνόταν μετά τη σφαγή του καλοαναθρεμμένου χοίρου, του οποίου χρησιμοποιούσαν συνήθως την κεφαλή και τα πόδια.
Το κρέας βραζόταν καλά και αρτυζόταν με αλάτι, πιπέρι, κομμάτια κόκκινης καυτερής πιπεριάς και δενδρολίβανο. Προσέθεταν επίσης ξίδι, χυμό από νεράντζια και λεμόνια.
