Ingredients

Pork tenderloin 
Tammari (mixture of vinegar, wine and dry coriander)

Method

Τhe same procedure is followed as with kokkalοun, i.e. the meat is put in tammari (a mixture of vinegar, wine and coriander: see zalatinα), where it is left for 3 days. The shirishes are then removed and left in the sun to dry out. (Karavas 2002, 194).

Cooking method

Preserving in wine and vinegar. 
Sun-drying.
