A variation of the typical syrupy cake made with semolina and replacing yoghurt with tahini, suitable for fasting.

Σάμαλι με ταχίνι, νηστίσιμο. A type of syrupy cake made with semolina, tahini and nuts.

Ingredients

2/3kg semolina
1 tsp baking powder
1 tsp baking soda
1 tsp ground mastic
1/2 cup tahini
1 cup sugar
2 cups hot water
A few blanched almonds
A bit of spoon sweet syrup

Method

In a bowl, combine the semolina with the baking powder, baking soda and mastic. Add the tahini and sugar. Finally add the water and knead well. Leave the mixture covered for 2-3 hours. Grease a baking pan with tahini and spread the mixture in it. Brush the top with spoon sweet syrup and cut the mixture into strips and garnish with almonds. Bake in a moderate oven and when cool, pour hot syrup over it, after cutting it again. (MANRE 2006, 57)
