Ingredients
1 cup of tahini
~3/4 cup water
Juice of 2-3 lemons
3-4 crushed garlic cloves
1/4 cup olive oil
Salt and parsley
Method
In a container, beat the tahini. Add the water (lukewarm) and the lemon. Then add the crushed garlic and continue beating until the tahini turns very pale. Finally add the olive oil, salt and as much lemon as needed. Thin it with more water if necessary but the tahini should be quite thick. Serve the tahini with chopped parsley. (MANRE 2006, 6)
