Mash of crushed chickpeas mixed with tahini, olive oil, lemon juice, salt and crushed garlic. This oriental dish is served as an appetiser.

500gr chickpeas
1 cup tahini, whipped
5-6 cloves of garlic, crushed
1/4 cup lemon juice
1/2 cup olive oil
Salt, paprika
Parsley, finely chopped
Boil the chickpeas after they have been soaked the night before and cook them very well. Drain them, mash them and then mix them with the tahini. Add the crushed garlic, lemon juice, olive oil and salt. If the mash is too dense, dilute it with some juice from the boiled chickpeas. Put the houmous in a container and let them cool or place them in the refrigerator. Sprinkle some paprika, decorate with chopped parsley and some olive oil and serve. (MANRE 2006, 6-7; MANRE 2008)
Boiling.
If you dilute the paste enough, you can make a delicious houmous soup and serve as a main meal (MANRE 2008).
