Cooking in a clay pot was commonly used in traditional recipes of Kornos village and of Cyprus in general.
Name - Recipe
Αρνί μαγειρεμένο στο φούρνο, σε πήλινο σκεύος.
1 1/2 kg lamb cut into pieces
1 kg of potatoes
1/4 cup of oil
1 glass of dry red wine
2 cups of tomato juice
2 cups of water
Salt and coarsely ground pepper
Peel, wash and cut the potatoes in two. In a saucepan, heat the oil and sauté the potatoes first. Put them in the clay pot. In a bowl, sou the wine and dip the meat. Sear the meat in the saucepan and put it in the clay pot, then add all the other ingredients, including the leftover wine. Cover with lid or aluminium foil and cook in the oven until the meat is tender. (Elizabeth Panagiotou, Kornos)
