A dish with lamb meat that was common throughout Cyprus. The cauliflower is marinated in wine, and the rest of the marinade is used to cook the food, creating a delicious and aromatic sauce.

Ingredients

1 kg of lamb cut into portions 
½ cup of red dry wine 
1 tbsp tomato paste
2-3 grated tomatoes
Salt, pepper 
Corn oil

Method

Add the corn oil to a pan to heat and then fry the meat. Add the wine and bring to boil. Add the tomatoes, the tomato paste dissolved in 2 cups of water and salt and pepper. Let the food simmer over low heat until the sauce thickens. (Dimitris Perikleous, Cooking Cypriots 2013-2014)
