This dish, with marinated lamb and rice, was customary during festive periods. The recipe comes from Ormideia in Larnaca district.

Ingredients

500 g lamb cut into cubes 
1½ glass rice 
2 glasses red dry wine 
2 glasses water 
½ glass oil
1 bay leaf

Method

Place the meat in a bowl with the wine to marinate for about 10 minutes. Sauté the meat until golden brown. Add the wine, water, oil and bay leaf. Once they are boiling, add the rice and continue cooking until the sauce has thickened. (Skevi Michael, Cooking Cypriot food 2012-2013)
