Ingredients

Version A
1 kg of figs
Sugar (1 part sugar to 1 part pulp)
2 tbsp lemon juice

Version B
1 kg of figs
2 glasses of sugar
1 tbsp lemon juice
Vanilla

Method

Version A 
Wash the figs well, peel them, chop them and put them in a pot with a little water. Boil them until they are soft. Measure out equal amounts of sugar and pulp and boil over high heat until the jam thickens. In the last 5 minutes add the lemon juice. Transfer the jam while warm in sterile jars, cap tightly and turn the jars upside down for 2-3 minutes. Return them to topside up and when cool, place them in a cool, dark place. (MANRE 2009, 28)

Version B 
Wash and peel the figs and place them in a deep saucepan with the sugar. Press with the palm of your hand to make a mass. Place over medium heat and stir constantly with a wooden spoon for 20 minutes. Add the juice and vanilla, skim, remove from heat and cover with a towel for 12 hours to cool.
