The minced meat mixture is shaped into a loaf, wrapped in a layer of lamb caul fat and baked in wine.

Ρολό με σκέπη (μπόλια). Minced meat loaf wrapped in a layer of lamb caul fat and baked in wine.
1/2 kg minced meat, twice ground
1 onion, finely chopped
1/2 bunch of fresh parsley, finely chopped
2 slices of bread
3 hard boiled eggs
1 lamb caul fat
1/2 cup dry white wine
Salt, pepper
In a bowl, place the minced meat and add the onion, parsley, salt, pepper and the bread crumbs (bread slices soaked in water and grated into crumbs). Spread the caul fat on the table and put the minced meat mixture on top. Place the boiled eggs in the centre, in a row, cover them with the minced meat mixture and shape into a loaf. Wrap the loaf in one layer of caul fat, place it in an ovenproof dish, pour the wine over it and place it in the oven. Once it has cooked and cooled down, cut it into slices and serve with mashed potatoes or pilaf rice. (MANRE 2006, 30)
