For the preparation of orange squash, Valencia oranges are used. Their juice is boiled together with sugar in equal proportions.

Ingredients

Orange juice from Valencia oranges 
Sugar (1 part juice to 1 part sugar)

Method

Wash the oranges very well and allow them to drain. Squeeze the oranges, strain the juice, measure it and place it in a saucepan with the corresponding amount of sugar (1 glass of juice to 1 glass of sugar). Put them on low heat and stir until the mixture is hot (not boiling). Allow the orange juice to become lukewarm and fill up the sterile bottles. Close them and when completely cool, place them in a dark, cool place. (MANRE 2009)

Comments

Mandarin squash (mantarinàda): follow the same recipe and substitute oranges with "Arakapa" mandarins (MANRE 2009).
