Chickpeas are baked in tomato sauce with onion, herbs and olive oil.

Pεβίθια στο φούρνο.
½ kg chickpeas
1 clove of garlic
2 onions, finely chopped
1 glass of tomato juice
2 bay leaves
Oregano
1 glass of olive oil
Salt, pepper
Soak the chickpeas in water from the night before. Drain them and put them in a dish oven with a lid. Add the onions, bay leaves, oregano, olive oil, tomato juice, salt and pepper. Add enough water to cover them and bake in the oven. If necessary, add some water. (MANRE 2008)
Βoiling in a pressure cooker (optional). Baking in the oven.
In order to speed up the cooking process, chickpeas can be boiled for 15 minutes in a pressure cooker before placing in the oven (MANRE 2008).
