Ingredients

1 kg of goat ribs cut in pieces (souvla size)
2 kg of ripe tomatoes, chopped (grated)
Onion cross-cut (as per the Karpasia method)
Olive oil 
Bay leaves 
Salt 
Pepper 
A bit of water 

Method

Season with salt and fry the meat in a saucepan over low heat until golden brown. Remove from the pan and set aside. Fry the onion in olive oil. Add the tomatoes, salt, pepper and bay leaves and allow the sauce to reduce. At the end, add the meat, a bit of water and simmer over low heat. Serve hot or cold.
