A soup full of flavour that combines chickpeas with tahini.

Ingredients

3 cups of chickpeas
Slices of bread, cut into cubes
Tahini
Parsley
Garlic
Olive oil
Lemon and salt

Method

Let the chickpeas soak in water overnight. In a pot, boil them very well in plenty of water and then add salt. Drain them (keep the water). Mash them separately.

Serve as follows: Place bread cut in cubes on each plate and dampen with the chickpea broth. Top with chickpeas. Add tahini (2-3 tablespoons), chopped garlic and parsley, olive oil (2-3 tablespoons) and lemon juice. Finally, add hot chickpea broth and serve. (MANRE 2006, 14)
