Yellow daisies, also known in Cyprus as "simillouthkia", when boiled together with eggs, transfer their bright yellow colour to the eggs. Yellow daisies are plentiful in Cyprus during spring time and each household would collect them to dye their Easter eggs.

Ingredients

Eggs
Yellow daisies
Vinegar
Salt

Method

In a pot, add plenty of yellow daisies. Place eggs and then daisies on top of them. Fill the pot with water, add vinegar and salt and leave over low heat until the eggs are dyed. When they are done, remove the eggs from the water and place them on a platter lined with kitchen paper to dry. Then, put a bit of oil on a piece of cotton wool and rub each egg to give it a “gloss". Arrange them in the Easter basket. (Koulla Karamani, Kornos)

The dyeing of the eggs is usually done on Maundy Thursday, while their clinking is a basic Easter custom.
