Potato salad with eggs
Boil the potatoes with their skin on. When cool, cut into pieces and mix with the boiled eggs and the rest of the salad ingredients.

2 potatoes
2 hard-boiled eggs
1 spring onion, finely chopped
1 tbsp of capers
Dry spearmint
Salt
Lemon juice or vinegar
Olive oil
Wash the potatoes and boil them with their skins on. When cool, peel them and cut them into small cubes. Put them in a salad bowl and add the sliced eggs, the onion, the capers, some dried spearmint and salt. Add lemon or vinegar and olive oil, mix well and serve. (MANRE 2006, 9)
