Language remarks

The name "galena" probably comes from gála (milk), one of the main ingredients that differentiate these buns from other Easter buns (note by E. Christou).

"Galénos is also the name of trahanas made only from milk, which is left to ferment (Petrou-Poeitou 2013, 34).

Processing method

Sugar and milk are added to the dough used to make other Easter buns and bread.

E. Rizopoulou-Egoumenidou (2008) states that galena were made in certain regions, mainly in Paphos, and were buns made with sugar and milk.

Apart from Paphos, they were also made in Paliometocho (oral testimony).
