Halloumi cake is a modern version of halloumoti and similar to the well-known tyropitta cake, using local Cypriot flavours instead.

Ingredients

Version A
1 glass of oil
1 glass of grated halloumi 
A little spearmint
1 small cup of brandy 
1 ½ glass of milk
6 eggs
3 cups of flour
2 tsp baking powder
A little salt

Version B
7 eggs
1 cup vegetable butter
1/2 cup sugar
2 ½ cups flour
3 tsp baking powder
1/2 cup milk
3 ½ cups of grated halloumi
1 tsp nigella seeds
3 mastic droplets (tears of Chios) crushed with a teaspoon of 
sugar (or use 1 tsp of mastic powder)
1 tsp of mahleb crushed with a teaspoon of sugar (or use 1 tsp 
of mahleb powder)
1/2 cup fresh spearmint, finely chopped
Sesame and nigella for sprinkling
1 egg yolk for egg wash
 

Method

Version A 
Preheat the oven at 175°C. In a mixer, beat the oil, the grated halloumi, the spearmint and the eggs, one by one. Then add the brandy a little at a time, alternating with a little milk and half the flour until all liquid ingredients have been added. Add a little salt, baking powder and the rest of the flour. Put the batter in a buttered baking tin and bake for 45 minutes at 175°C. (Sotira Kyriakou, 36 years old, Kyperounda)

Version B 
Preheat the oven at 180°C. Separate the yolks from the egg whites. In a mixer, beat the egg whites to form soft peaks and transfer to a bowl. Beat the butter with the egg yolks and the sugar. Sift in the mixing bowl the flour with the baking powder. Add the milk to the mixture and then the halloumi, nigella seeds, mastic, mahleb and spearmint and mix with a spatula. Gently fold the egg whites into the mixture. Butter a round cake tin and two oblong cake tins and pour the batter into them. Beat an egg and brush the surface of the cakes and sprinkle with sesame seeds and nigella. Bake for 40-50 minutes. (Florentia Kythraiotou)

Comments

Traditionally, halloumoti was made with sourdough (not baking powder) in a plain bread dough with no additional ingredients except oil. Halloumi would be added in pieces (cubes), rather than grated. (Note: Stalo Lazarou) Find this recipe as Halloumopitta/Halloumoti in the RECIPES section.
