Traditional halloumopitta (mini halloumi pies) are made by adding pieces of halloumi and spearmint to plain bread dough and are usually shaped like little round bread loaves.

Ingredients

1 kg of flour
A little sourdough (or 2 tbsp yeast)
1/4 cup peanut oil (or other)
2-3 halloumi cut into small pieces (preferably mature)
2 tsp spearmint
4 chopped onions
A little salt
warm water

Method

Knead the dough well. Add the remaining ingredients and knead. Shape the pies like small bread rolls and sprinkle them with flour to prevent them from sticking. Let them prove and bake in a high oven until they are golden brown (about an hour). (MANRE 2006, 45)
