Kaïkanás with anari cheese

Kaïkanas is a type of rich pancake, containing eggs. In this recipe anari cheese is added. The recipe is prepared in Omodos in the mountainous district of Limassol and Potamia in the district of Nicosia.

Ingredients

2 eggs
1 anari (myzithra) mashed
½ tsp salt
1 tbsp olive oil
Dried spearmint

Method

Using a fork, mash the anari Beat the eggs and mix them with the anari, salt and spearmint. In a pan, heat the oil. Pour the mixture into the pan and fry gently until browned. (Anna Economidou, Cooking Cypriot food 2012-2013)

Comments

In Marathasa they add espima, while in the area of Pitsilia there is a very interesting variation in which sweet and savoury are combined, something that is rarely found in the Cypriot cuisine (Kythraiotou 2013, 45).
