Xerotíana tarahtá
Recipe from Rizokarpaso. The tarahta xerotiana are served with sugar or honey and raisins (optional).

Είδος λουκουμάδων. A type of traditional Cypriot doughnuts.

Salt
Lukewarm water
Oil for frying
Sugar or honey
Raisins (optional)
In a deep basin, add the lukewarm water . Add the flour a little at a time and stir until it becomes a thick paste. Use a tablespoon to scoop out spoonfuls and drop them into plenty of hot oil. Let them get golden brown and then remove them with a slotted spoon and drain them. Serve them with sugar or honey. (Publication permission from: http://www.rizokarpason.com/ sintages1.htm)
