These pishíes are rolled out to the size of a plate, fried and sprinkled with sugar or honey. They are folded 2-3 times or rolled.

Pishíes are sweet, fried small pittas. They represent the traditional pancakes of Cyprus.

Ingredients

Flour
Salt
Lukewarm water
Sugar or honey
Oli for frying

Method

Knead to a firm dough with local flour, a little salt and lukewarm water. Allow the dough to rest for 2-3 hours. Shape the dough into a long strip with about five centimeters in diameter. Then cut it into pieces 2 to 3 cm thick. Roll out each piece to the size of a medium-sized plate. Then fry them in very hot oil, one by one. When fried, sprinkle some sugar or honey.
