A variation of the keftédes recipe using wild greens (strouthouthkia) and potatoes, suitable for fasting periods or for vegetarians.

In Cyprus, the plant Silene voulgaris is called strouthkiá or strouthoúthkia or tsakrithkia (Kavroulaki 2012).
1 kg of strouthouthkia
1 kg of potatoes
1 glass of breadcrumbs
1 glass of flour
salt
pepper
cinnamon
In a pot, bring the strouthouthkia to a boil. Then rinse and drain them. In a bowl, grate the potatoes. Add the strouthouthkia, salt, pepper, cinnamon, flour, and breadcrumbs to the potatoes and knead them. Then form patties and fry in hot oil. (Maria Papachristodoulou, Kyperounda)
