Ποικιλία αγριόχορτων (σιληνή) με αυγά. Wild greens, namely bladder campion or maidens-tears, with eggs.

Language remarks

In Cyprus the plant silene (silene voulgaris) is called strouthkia or strouthouthkia or tsakrithkia. (see https:// historyofgreekfood.wordpress.com/2012/03/13/).

Ingredients

1 kg of bladder campions (maidens-tears)
4 tbsp seed oil or olive oil
3-4 eggs
a pinch of salt

Method

Version A 
Wash the greens well. In aBring oil to a boil in a pan and add the greens. Let them cook and then add the eggs and salt. Leave them for about 10 minutes and serve. (Kyperounda, see Kourri and Lazarou 2007)

Version B 
Clean and wash the greens and put them in boiling water for a short time. Drain them and sauté them lightly. Remove the oil and add the eggs, well beaten. Stir until the eggs thicken and serve. (MANRE 2006, 9)
