A variation of the keftedes recipe, using broad beans and leek, baked in the oven. Suitable for fasting periods or for vegetarians.

Κεφτέδες με κουκιά και πράσα.
1½ glass of beans
4 leeks
1 tbsp olive oil
2 fresh onions
2 cloves of garlic
fresh parsley
salt
Soak the broad beans in water for 12 hours. Drain them, remove the skin and mash them together with the garlic, onions and chopped leeks. Add the chopped parsley, olive oil and mix. With this mixture, which resembles a puree, shape balls, roll them in flour and flatten them. Place them on a baking tray greased with oil. Bake in the oven, in a medium temperature, until golden brown. (MANRE 2008)
