A variation of the meatballs recipe, suitable for fasting periods or for vegetarians. Zucchini and carrots are used instead of minced meat.

Ingredients

2 potatoes
1 large onion
3 zucchini
2 carrots
Fresh parsley, finely chopped
1/4 cup of olive oil
1/2 cup of breadcrumbs
Salt
Oil for frying

Method

Peel the potatoes, grate them on a coarse grater and drain them. Grate the onion, carrots and courgettes also on a coarse grater, but do not drain them. Mix them in a bowl with the potatoes, parsley, olive oil, breadcrumbs and salt. Form the mixture into round and flat meatballs and fry in hot oil. (Theognosia Andreou, Kornos)
