Ingredients

2 large bunches of charlocks
2-3 onions of about 5cm in diameter
¾ glass of bitter orange juice
1 tsp salt

Method

Clean, wash and boil the lapsanes (charlocks) in water until they are cooked very well. Transfer them in a colander and drain them completely. Cut them crosswise to get smaller pieces. Slice the onion and sauté in plenty of olive oil. Add the lapsanes and fry them all the water has evaporated. Pour the bitter orange juice and continue to cook until the juice is reduced.
