Μολόχες με ρύζι.
Version A
2 bunches of mallows
1 glass of rice
3 glasses of water
2 spoonfuls of sarza (home-made tomato pulp)
1 onion, chopped
Salt
Olive oil
Version B
2 bunches of mallows
1 glass of rice
2 glasses of water
½ glass of tomato juice
1 stock
1 onion, chopped
Olive oil
Version C
3 bunches of mallows
6 tbsp olive oil
1 onion, chopped
1 cup of grated tomato
6 tbsp rice
Salt, pepper
juice of 1 lemon
Version A
Sauté the onion lightly in the oil. Add the water, mallows, salt and the tomato pulp. When the food is boiling, add the rice and let it cook and absorb the water. (Melani Michaelides, 85 years old, Asgata, Limassol)
Version B
Wash the mallows very well, cut them into small pieces, put them in hot water and then drain them. Wash the rice. Bring the oil to a boil for a short time and sauté the onion lightly. Add the tomato juice and let it reduce. Add the mallows, water, broth and salt. When it comes to a boil, add the rice and let it cook and absorb the water. Finally, remove it from the heat and cover it with a towel. (Anna Nikolaou, 61 years old, Kyperounda)
Version C
Wash the mallows and cut them into pieces. Sauté the onion in olive oil until it softens and add the tomato. Stir for a few minutes, until the sauce is halfway reduced. Add the mallows and let them half cook. Add the rice, proportionate quantity of water, salt, pepper and lemon juice and continue to cook until the rice is cooked. (MANRE 2006, 24)
