Ingredients

1/2 kg of mallows
1tsp salt
1 lt water

Method

Remove the leaves from the mallows, leaving only the small shoots and tender stems. Then cut them into pieces about 5-8 cm long. In a saucepan, bring the water to a boil and then add the mallows. Leave them to boil well enough and cook. Just before they are cooked, add the salt. Serve with lemon and olive oil. (Xenophontas Lazarou, 74 years old, Politiko Nicosia).
