Chicken and rice or lentils are cooked in chicken broth, which contains tomato sauce. The recipe comes from Pyrgos Tillirias in the district of Nicosia.

Ingredients

1 chicken 
1 onion, finely chopped 
1 glass rice or 1 glass lentils
½ kg fresh ripe tomatoes, grated or tomato sauce
Salt, cinnamon, cumin
A little oil for sautéing
Chicken broth

Method

Cut the chicken into small pieces and sauté it in a little oil. Add finely chopped onion, salt, cinnamon and cumin. Add the grated tomatoes or tomato sauce and mix. Add enough chicken broth to cover the food. Let it boil and then add the rice or lentils. Continue cooking until the food has absorbed all the liquid.
